At Akoko Masterchef: The Professionals finalist William JM Chilila, previously at Orrery, creates enticing dishes from across West Africa, with an emphasis on using sustainably-grown ingredients from African and British suppliers. The menu starts with Nigerian Export Guinness bread rolls and moves on to goat pepper soup, grilled 28 day aged beef suya with caramelised onion and confit tomato, lobster with melon seed veloute and pounded yam, grilled aubergine with aubergine caviar and the signature baobab dish sweetened with honey. Interiors by Rene Dekker Design showcase the natural beauty, simplicity and earthiness of West Africa with walls covered in soothing clay and decorated with African art.
