Harneet and Devina Baweja, owners of Gunpowder who opened Madame D's in 2017, launch Gul and Sepoy in September of the same year, combining the flavours of Northern India with the more relaxed approach of the South Western Indian coastline. On the same Spitalfields street as Madame D's, the menu here at 65 Commercial Street is divided into two sections, with chef Nirmal Save giving a modern take of the rustic, provincial style-food associated with the soldiers of the Indian army, cooked on the move, for the 'Sepoys' (soldiers) portion. These include masala wild rabbit terrine with celeriac and fig, potted coorgi pig's head and wild berries and lavender kheer. The 'Gul' menu reflects the banquets of the Raj palaces in North-Western India with rich flavours featuring in the three bird's awadhi korma, jackfruit and walnut-ke-sheek and kid goat raan with pickled root vegetables. On two floors, with a paired back aesthetic throughout, the restaurant is showered in natural light. A large oak panelled bar greets guests while the upstairs dining room has intricate wooden features and large marble feasting tables - a touch of luxury, in a nod to the decadence of North India's ancient royal palaces.
