Nieves Barragan, former executive chef at Barrafina which, under her watch, won a Michelin star, sets up her own Spanish restaurant on Heddon Street, the foodie hotspot off Piccadilly . She has teamed up with Jose Etura, Barrafina's general manager, with whom she worked for more than a decade, for Sabor , a restaurant, bar and asador (or grill). Serving "the kind of satisfying, unpretentious food her father, a builder, would eat when he arrived home" (Barragan told The Guardian), this is "honest, uncomplicated food". Expect quid cooked in its own ink, comforting stew made with potato, chorizo and chicken stock and flan for pudding. The ground floor is home to the main counter dining , surrounding the open kitchen, and there's a separate bar with sherries, txakolis, vermouths, beers and wines. Upstairs, roast suckling pig and octopus - cooked in traditional copper pans with olive oil and paprika - are a speciality.
