Climb the canalside cast-iron staircase to the upper floor of The White Building in Hackney Wick and you'll find Silo, a smart casual restaurant by award-winning chef and zero-waste pioneer Douglas McMaster. His sustainable approach is seen throughout the whole restaurant, which overlooks the River Lea, from its supply chain - trading directly with farmers - to composting any leftover scraps. Interiors too focus on sustainable design, the result of a collaboration between interior designer Nina Woodcroft and conservationist Seetal Solanki. Furniture is made from post-industrial materials and there's a large counter made from recycled glass bottles. On the continually changing menu of ten to fifteen dishes you may find dishes like smoked violet carrots with egg yolks and elephant garlic as well as artichokes cooked on fire with stilton sauce and pickles. All are cooked in the open kitchen with a burning fire at its centre. Wines are sourced from small, artisanal producers such as Sussex-based natural and biodynamic wine producer, Ben Walgate of Tillingham Wines, and cocktails are made in collaboration with award-winning bartender, Mr Lyan.
