Emma Reynolds and Ken Yamada, the team behind the hugely popular pop-up restaurant Tsuru Sushi, launched Tonkotsu (meaning 'pig bones') in July 2012 and since then the ramen bar on Soho's Dean Street has proved hugely popular. The restaurant serves a short menu with just three ramen dishes on offer: London Ramen, Tonkotsu Ramen and Tokyo Spicy, beefed up with sides like handmade gyoza, salads and crab korokke. The London Ramen is their take on the traditional English breakfast with flamed-charred smoked bacon, egg, shimeji and shiitake mushrooms, spring onions and sesame seeds, all in a delicious soup-y ramen. The equally good Tokyo Spicy is made with shredded pork and chilli oil. Drinks to wash it all down with include Japanese and UK beers and whiskies, sake and juices.
