All of the dishes at Ugly Butterfly, Adam Handling's restaurant with sustainability at its core, are made from ingredients typically thrown away as waste. As well as providing a great place to eat and drink, the King's Road restaurant and Champagne bar is a hub for sustainability. Even the interiors have been created using up-cycled and re-utilised materials. Twice a week, on Wednesday and Sunday evenings, there are talks on the everything from sustainable food and drink to fashion and art. The menu makes use of unwanted food - most of which comes from Adam Handling Chelsea - the in-house restaurant at the Belmond Cadogan - to create dishes such as deboned crispy fried chicken feet with caviar, cheese doughnuts, broccoli stalk Caesar salad and overripe fruit jam. Partnering with Cadogan, Quintessentially and The Felix Project, a percentage of the profits goes towards fighting food waste, and two dishes on the menu will use Feast Fairly pullet eggs which are usually considered too small to use. Open for walk-ins from lunch time until late evening from Wednesday to Sunday, Ugly Butterfly is creating something beautiful out of what would normally be considered trash.
