Add a sense of theatrics to your interval drinks at Pavlova's, the Victoria Palace Theatre bar by Jason Atherton, in partnership with the theatre's owner, Cameron Mackintosh. Named after the legendary Russian ballerina whose statue stands on top of the theatre, the 20-seat bar offers drinks and cocktails including 'The Dying Swan', a gin and citrus mix served in a music box which opens to reveal a rotating ballerina and the cocktail. The drinks list, by the group's bar manager, Jay Doy, has a strong gin focus with a hidden gin cupboard storing over 38 varieties from around the world. You can sip on a 'Queens Park Swizzle' or a 'Garden Negroni' whether you're seeing a show or not. The bar is open throughout the day, from morning croissants and coffees to paninis, charcuterie and cheeses for lunch and dinner, all in the elegant surrounds of chandeliers, duck egg blue seating and polished hardwood floors.
