Stretching from the Punjab, through Mumbai, and all the way past Goa, the influences on this pan-Indian menu are a fascinating education in the cuisine, geography and traditions of the sub-continent. From succulent spiced squid rings inspired by the blue waters of Kerala, to staunchly traditional Kashmiri rogan josh, the food is as excellent as it is varied.
